Ingredients:
– 1 cup unsalted butter
– 2 cups granulated sugar
– 4 large eggs
– 1 teaspoon vanilla extract
– 1 cup all-purpose flour
– 1/2 cup cocoa powder
– 1/2 teaspoon salt
– 1/2 cup cannabis-infused coconut oil (see note)
– Optional: 1 cup chopped nuts (walnuts or pecans)
Instructions:
1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper.
2. In a microwave-safe bowl, melt the butter. Add the granulated sugar and stir until combined.
3. In a separate bowl, beat the eggs and vanilla extract together. Gradually add the egg mixture to the butter-sugar mixture, stirring well.
4. In a separate bowl, whisk the flour, cocoa powder, and salt together. Gradually add this dry mixture to the butter-sugar-egg mixture, stirring until just combined.
5. Slowly mix in the cannabis-infused coconut oil until well incorporated. Be sure to evenly distribute the cannabis oil throughout the batter.
6. If desired, fold in the chopped nuts.
7. Pour the batter into the prepared baking dish, spreading it out evenly.
8. Bake in the preheated oven for approximately 25-30 minutes, or until a toothpick inserted into the center comes out slightly moist with a few crumbs.
9. Remove from the oven and let the brownies cool completely in the baking dish before cutting into squares.
Note: Cannabis-infused coconut oil can be made by heating 1 cup of coconut oil on low heat in a saucepan and slowly stirring in 1 gram of decarboxylated cannabis. Let it simmer for 1-2 hours, then strain the mixture through a cheesecloth or fine mesh sieve to remove the plant material. Allow the oil to cool and solidify before using.
